America Celebrates
The "menu driven" format of America Celebrates, i.e., each "Holiday Section" contains menu recommendations which include traditional foods or which will accompany a main course well. For example, the New Year's Day menus include Saut矇ed Red Cabbage and Black Eyed Peas to recognize and honor the tradition that cabbage and black eyed peas on New Year's Day will bring good luck and financial well-being. The format is designed to assist and simplify the decision, purchasing and preparation process. However, all recipes are individually accessible and may be printed and used whenever and of course, with any other foods or dates you choose. Many of the menus are very flexible and usable for a variety of special and/or family events other than holidays. Each recipe has been prepared and many are photographed so that you have a good visual reference and each has been simplified to the extent possible to reduce wasted effort. Being a practicing "maker of market lists" (which are made to be given over to someone else who usually purchases at least 70% of the items on the list - then practices that popular art of "impulse buying" substituting ice cream, magazines and bubble bath), I am acutely aware of the need for the shoppers list. For that reason, the market list for each menu is believed to be "all inclusive", and allows you to edit the printed list as you wish and exclude any "staple items" which may already be in your pantry or substitute ingredients or other supplies to meet your individual choices. And, speaking of substitutions - about the only substitute I have found for "advance preparation" is "more advance preparation". Some recipes or foods just REQUIRE overnight marinating or resting or making/rising. And to get the results you want from your work in the kitchen, it is important to review your menu and your recipes at least one day before you anticipate cooking/preparing each dish. My background includes business ownership and management, political involvement in the design and implementation of legislation and regulations associated with caring for the elderly and nursing home regulations, ownership and operation of a 300 ton recreational vehicle (a riverboat paddle wheeler) serving 200 - 250 guests at weddings, family reunions, college graduation parties, and large law and oil company office parties/functions and willingly preparing foods, decorations and accommodations for family and friends for virtually every event identified in America Celebrates. The book represents the "tip of the iceberg" as I explored the totality of American celebrations and how to bring the most celebrated and popular foods prepared for these celebrations to you in print and reflect my personal experiences I have enjoyed in the process. So, from New Year's Day to Christmas Eve, I hope you use and enjoy this special gift of "America Celebrates" from me to you to Celebrate America. Florence Gray-Suttle, author

Feed my Heart God
My experience of how God led me to write this book: The Covid-19 pandemic, which began in 2020 offered an awareness for many of us of what to do in this time. Many lost their health insurance, homes and jobs. It became a worldwide concern. During this time, Iwas finishing one of my books, One on One: It's Personal. My prayers asked for guidance on what to do next. I started to clean and purge what I didn't need from my house. The next thing I knew, I was packing. I left Mexico City and moved to San Miguel Allende. Moving was challenging; I had to remind myself God was with me.
Eats
"Folklore, which delves into the culture of peoples, may be a more important study about real life--private life--than standard, formal history. . . . One of the lessons that we have learned--or are beginning to learn--from the study of folklore is the importance of food and eating customs in unravelling the history of a people. . . . Eats may provide as much information about the way we live and see the world as the people we elect to office or the houses we build or the books we approve or the movies we film. . . . The foods we eat, the way we eat them, and the imagination we bestow upon their preparation will tell [much about us] to historians, folklorists, and anthropologists." --James Ward Lee, from the foreword

Grazing America
Coast to Coast, we are a nation of local tastes and conspicuous calories. From Rochester, New York's Garbage Plate and Detroit, Michigan's Boogaloo sandwich, to Hawaii's Spam Musubi and Biloxi, Mississippi's Koolickles, our regional foods in the United States are deeply embedded into our local culinary consciousness. These hometown delicacies are a marriage of cultures, subtleties of tradition, local ingredients, and, above all, community. These morsels of scale-tipping pride are equal parts civic symbols, edible tourist attractions, and cultural obsessions. This book features the birthplace of many of the foods we love. Some seemingly strange combinations are hard to get your head around until you take your first bite. Please note: none of them will make you skinny. These recipes, which I've been collecting for decades from many long-lost sources, are an homage to our immense bounty of our great country's uber-local foods and a great excuse to putter in the kitchen.

Modern Cookery in All Its Branches
Designing it as a manual of American housewifery, she has avoided the insertion of any dishes whose ingredients cannot be procured on our side of the Atlantic, and which require for their preparation utensils that are rarely found except in Europe. Also, she has omitted every thing which may not, by the generality of tastes, be considered good of its kind, and well worth the trouble and cost of preparing. The author has spared no pains in collecting and arranging, perhaps the greatest number of practical and original receipts that have ever appeared in a similar work; flattering herself that she has rendered them so explicit as to be easily understood, and followed, even by inexperienced cooks. The directions are given as minutely as if each receipt was "to stand alone by itself," all references to others being avoided; except in some few instances to the one immediately preceding; it being a just cause of complaint that in some of the late cookery books, the reader, before finishing the article, is desired to search out pages and numbers in remote parts of the volume.

Corn
Without corn, Tema Flanagan writes, the South would cease to taste like the South. Her treasury of fifty-one recipes demonstrates deliciously just how important the remarkable Zea mays is to southern culture and cuisine. Corn's recipes emphasize seasonality. High summer calls for fresh corn eaten on the cob or shaved into salads, sautes, and soups. When fall and winter come, it is time to make cornmeal biscuits, muffins, cobblers, and hotcakes, along with silky spoonbread and sausage-studded cornbread stuffing. And the heaviest hitters, cornbread and grits, are mainstays all year round.Flanagan also surveys corn's culinary history--its place in Native American culture, its traditional role on the southerner's table, and the new and exciting ways it is enjoyed in southern kitchens today. Appreciating how this oversized grass is capable of providing sustenance in an astonishing array of forms, Flanagan organizes the book to reflect corn's versatility. Sections feature corn in its full glory: fresh on and off the cob, dried and ground, nixtamalized (soaked in an alkaline solution and hulled to make hominy) and popped, and mashed and fermented. From Sweet Corn and Poblano Chowder to Southern Skillet Cornbread, from Fresh Corn Tortillas to Classic Cheese Grits, and from Molasses Caramel Corn with Candied Bacon, Peanuts, and Sesame to New Orleans Bourbon Milk Punch, the dishes range from classic southern to contemporary to globally influenced.
Chicken
While fried chicken may be the South's iconic dish, when it comes to southern foodways, there are a lot of ways to love America's most popular fowl. Preparations range from Country Captain to Carolina Chicken Bog to Chicken and Parslied Dumplings and more. Here, Cynthia Graubart celebrates the bird in all its glory, southern style and beyond. This little cookbook packs all the know-how that cooks need to make irresistible chicken dishes for everyday and special occasions, from shopping and selecting to cutting up, frying, braising, roasting, and much more. Ranging in style from traditional southern to contemporary to international, fifty-three recipes are organized to help easily match the cut of chicken to the perfect recipe. Be assured that Graubart includes instructions for making the best fried chicken ever -- seven different ways. Graubart also brings together the chicken's culinary history with the popular culture and lore that surrounds chicken cookery in the South. She notes that the special Sunday Sabbath dinner was often built around a chicken -- in fact, prior to the 1940s, chicken was sometimes more expensive than beef or pork. Today, the southern states lead the country in annual poultry production, and Kentucky Fried Chicken features throughout the American landscape. But you won't need take-out when you have Chicken in your kitchen.
Okra
Passionate okra lovers crave this bright green, heat-loving vegetable, whether fried, grilled, steamed, roasted, boiled, broiled, pickled, raw, whole, sliced, or julienned. With Okra, Virginia Willis provides "the key that unlocks the door of okra desire" to okra addicts and newcomers to the pod alike.Topping eight feet, with gorgeous butter-yellow flowers that ripen into the plant's signature seed-filled pods, okra has a long association with foodways in the American South. But as Willis shows, okra is also an important ingredient in cuisines across Africa, Asia, and Latin America. Featuring gardening tips, a discussion of heirloom varieties, and expert cooking directions (including a list of "top ten slime-busting tips"), Okra brilliantly showcases fifty delectable recipes: twenty-six southern dishes, ranging from Southern-Style Fried Okra to Gulf Coast Seafood Gumbo, and twenty-four authentic global dishes, from Moroccan Lamb and Okra Tagine with Preserved Lemons to Cuban Pork with Yellow Rice, Okra, and Annatto Oil.
Rice
Among the staple foods most welcomed on southern tables--and on tables around the world--rice is without question the most versatile. As Michael W. Twitty observes, depending on regional tastes, rice may be enjoyed at breakfast, lunch, and dinner; as main dish, side dish, and snack; in dishes savory and sweet. Filling and delicious, rice comes in numerous botanical varieties and offers a vast range of scents, tastes, and textures depending on how it is cooked. In some dishes, it is crunchingly crispy; in others, soothingly smooth; in still others, somewhere right in between. Commingled or paired with other foods, rice is indispensable to the foodways of the South. As Twitty's fifty-one recipes deliciously demonstrate, rice stars in Creole, Acadian, soul food, Low Country, and Gulf Coast kitchens, as well as in the kitchens of cooks from around the world who are now at home in the South. Exploring rice's culinary history and African diasporic identity, Twitty shows how to make the southern classics as well as international dishes--everything from Savannah Rice Waffles to Ghanaian Crab Stew. As Twitty gratefully sums up, "Rice connects me to every other person, southern and global, who is nourished by rice's traditions and customs."
Shrimp
Recalling boyhood shrimping expeditions with his father and summoning up the aromas and flavors of a southern shrimp boil or shrimp fry, chef Jay Pierce brings America's favorite shellfish to center stage with fifty recipes for southern classics, contemporary dishes, and international delicacies. Pierce's lively introduction focuses on the South's fishing and culinary connections with shrimp, which are abundant in the estuaries and bays that line southern shores.Shrimp, he notes, are one of the last truly wild creatures that Americans consume in significant quantities. Pierce encourages today's cooks to support local shrimp fisheries in order to help ensure that future generations will continue to enjoy American-sourced shrimp in abundance, and he explains how to procure the freshest shrimp throughout the cycle of seasons. While shrimp is popular throughout the region for entertaining a backyard crowd, it is also a go-to ingredient for the special-occasion menu. Demystifying fancier dishes and offering everyday cooks step-by-step instructions for all stages of preparation, Pierce highlights just how deliciously versatile shrimp can be.
