The concept behind this book is to take a holistic view of food texture, starting with the determination of food texture, its perception in the mouth, and its measurement by both sensory and instrumental methods, and to examine the relation between them. The book has been divided into four sections: Fundamentals, Sensory and Human Interactions, Instrumental Analysis, and Food Products. Essentially we cover the techniques used for measuring food texture, and then apply them to the different product groups. Readers of the first edition will notice the title has changed, with the adoption of the term texturology. In the long history of food texture research, texturology has been occasionally used in literature. The term texturology has not been widely accepted by texture researchers (texturologists) because of their concern over whether the theories and techniques are broad and strong enough to support texture research as a scientific discipline. During the 24 years since the publication of the first edition, the editors have observed vast developments in theories as well as the assessment methodology of food texture (both sensory and instrumental) and these have shaped our understanding. This second edition brings the science up to date by introducing topics not previously covered (e.g. psychophysics, tribology, oral processing, texture maps and special foods for dysphagia patients). It includes an expos矇 of the instruments to measure food texture, and also considers techniques for measuring consumer perception of food texture (in addition to the sensory properties). Additionally, it amends omissions from the first edition such as dairy products; fish; bakery products; and, sugar confectionery, asproduct groups. All in all it is expanded and updated in its coverage of food texturology, as a coherent scientific discipline.

This guide is aimed at giving background and purpose to the process of completing a J100 analysis, complete with a case study as an example. The threats covered include contamination, cyber, flood, hurricanes, ice storms, earthquakes, tornadoes, and wildfires. The original idea for the operational guide series to accompany the utility management standards came from utility managers who participated in a two-year pilot project that was conducted and supported by the American Water Works Association (AWWA) Utility Quality Programs Committee, the AWWA Accreditation Committee, and nearly 30 utility professionals from more than 10 North American utilities. The pilot project assessed the applicability and practicality of the series of AWWA utility management standards by working with two utilities--Birmingham (Ala.) Water Works and Sewer Board and Washington County (Va.) Service Authority--and a team of volunteers from utilities, consulting firms, and other organizations. During the pilot process, the utility managers requested that AWWA develop some type of guidance or how-to documents to go along with the management standards. These guidance documents would serve two purposes: one, help utility managers understand the purpose and function of these new standards, and two, help them implement and incorporate the standards into everyday operations. From this suggestion the series of operational guides was conceived.

Since the advent of digital computers, numerical solvers have become progressively more powerful and reliable. However, the accuracy of the model depends on the extent to which it reflects the real system. To ensure that the model is an accurate representation of the real system (essentially a "digital twin" of the real system), it is necessary to compare model results with real-world data and adjust model parameters to reduce the level of uncertainties in the model results, and then identify and correct as many discrepancies as is feasible. According to the Calibration Subcommittee of the AWWA Engineering Modeling Applications Committee (2013a), "water distribution model calibration consists of comparing model results with accurate field measurements and making adjustments to model and reviewing field data to improve agreement over a range of conditions that correspond to how the model is intended to be used." Calibration should result in a more accurate model, a better understanding of the strengths and weaknesses of the model, and greater confidence in model results. Hydraulic models of water distribution systems are widely used to help solve engineering and operational problems in water systems. To ensure that a model accurately represents a real system, model results are compared with physical measurements over a range of conditions. If the model predictions agree with the data, the model can be used with confidence for the conditions it was calibrated.
