Initial work has shown short and likely longer term negative effects on the human senses, with some indications of effects on consumer preferences; however, as of yet, very little is known about the impacts on eating behaviours and consequent longer term effects on appetite. The aim of this Special Issue anthology was, for the first time, to bring together researchers with key insights into how COVID-19 has impacted appetite and eating behaviours from the fundamental to the applicable, as assessed by human sensory perception. Thus, research is included that explores various themes, from the basic effects on the senses, to changes in consumer preferences, all the way to how and why COVID-19 has changed consumer behaviours in relation to food and eating in the longer term. Overall, we wished to document and bring together key research in the sensory and consumer space with respect to COVID-19, with the overall aim to highlight and ensure this research has a lasting impact regarding future understandings of measures developed to help and treat people affected during the ongoing pandemic.

The Special Issue entitled "10th Anniversary of Cells-Advances in Cell Cycle" was launched together with other sister Special Issues under the umbrella "10th Anniversary of Cells." The cell cycle is a series of events that drives cells to divide and produce two new daughter cells. The typical cell cycle in eukaryotes is composed of the following phases: G1, S, G2, and M phases. Cell cycle progression is mediated by cyclin-dependent kinases (CDKs) and their regulatory cyclin subunits. CDKs, such as CDK4/6, CDK2, and CDK1 (also known as CDC2), are serine/threonine kinases with a wide variety of substrates. CDKs are activated mainly by binding to their cyclin partners, whose expressions rise and fall throughout the cell cycle to mediate the temporal activation of each CDKs. Various cell cycle checkpoints exist to ensure that critical processes are engaged prior to progression to the next phase. These cell cycle checkpoints are the G1 (restriction) checkpoint, the G2/M DNA damage checkpoint, and the spindle assembly checkpoint (SAC).This Special Issue attracted the attention of many scientists in the cell cycle field and consists of 10 high quality papers, including four research articles and six scientific reviews: a great success. The four research articles focus on various important topics of the cell cycle using a broad range of model organisms, including yeast, sea urchins, green algae, and human cancer cell lines.

Among gluten-related disorders, coeliac disease (CD) is the best-known one to date, a chronic immune-mediated enteropathy triggered by exposure to gluten in genetically predisposed individuals. It is a common disease, occurring at all ages and characterized by a wide spectrum of clinical manifestations, affecting any organ or tissue. The diagnosis rate of this pathology has increased in the last 10 years, so worldwide epidemiologic data are now available that show that CD is ubiquitous, with a prevalence of 1.4%, higher in female than male individuals. Currently, the only effective treatment for CD is strict and lifelong adherence to a gluten-free diet (GFD). However, CD research is changing rapidly due to the continuous advancing of knowledge. For this reason, the main goal of this Special Issue has been to address the existing knowledge gaps and help advance such important aspects as the pathophysiology, diagnosis, follow-up, and therapeutic options of this pathology. This Special Issue includes 12 peer-reviewed articles reporting on the latest research findings in and evidence related to CD. The published articles cover a range of topics central to CD and GFDs.

Species are not functionally independent. From a long-term perspective, only ecosystem with a fully integrated nutrient cycle is alive. The lack of trophic autonomy should be considered one of the key factors that ensure and maintain biodiversity. The variability of abiotic conditions, both in space and in time, also creates a huge diversity of niches and subniches for genotypes and species. In addition, life maintains its essential variables (biomass and productivity) as stable as possible due to the diversity of structures (genes, macromolecules, metabolic pathways, genotypes, species, etc.): the structures that reach optima are multiplied and thus activated, while the functioning of those which lost their optima is suppressed. The facts and concepts presented in this monograph thus support the conclusions that (a) genotype and species diversity is supported by trophic specialisation (b) biodiversity helps to stabilise the functions (essential variables) ofindividuals, populations, and ecological communities (c) in evolution, the emergence of biodiversity is determined by heritable variation and the advantage of specialised (more effective) structures over non-specialised ones (d) biodiversity is characterised by its ability to increase itself and to organise itself into relatively consistent structures, which we call production pyramids and nutrient cycles. This book therefore provides an answer to the question "why the diversity of life is of such and such a nature".

Nutritional Deficiency in Celiac Disease

Celiac disease is a T-cell mediated chronic inflammation of the small intestine that ultimately results in villous atrophy. A lifelong strict gluten-free diet, the only accepted treatment of celiac disease so far, gradually neutralizes immune responses and regenerates damaged villi. Naturally gluten-free (rice, maize, fruits, vegetables, etc.) and processed gluten-free products (commercial products) are advised as substitutes for gluten-containing food. However, in comparison to gluten-containing food, such alternatives are inadequately nutritious and cannot compensate for the necessary nutritional requirements. A complete removal of gluten from celiac patients' diet progressively alters the level of essential nutrients that eventually lead to nutrition imbalances. It has been reported that gluten-free products contain a low amount of essential micronutrients (iron, folate, and vitamin B), fiber, and a higher amount of carbohydrates and lipids compared to gluten-containing products. In recent years, nutritional complications are being reported in celiac disease patients, especially in growing children affected with celiac disease, which has become a serious health issue and requires immediate action. This book focuses on nutritional deficiencies related to celiac disease and provides updated knowledge and new prospects for nutritional deficiencies in celiac disease.

Food allergy, a specific immune response that occurs reproducibly upon exposure to a food allergen, is an increasing public health problem, causing a significant burden for affected patients, resulting in dietary restrictions, fear of accidental ingestions and related risk of severe reactions, and reduced quality of life. Clinical presentation ranges from mild to life-threatening symptoms. Component-resolved diagnosis with recombinant allergens has improved the diagnosis and, consequently, clinical management. Currently, there is no specific treatment for food allergy, so the only available management is limited to strict dietary avoidance, education on prompt recognition of symptoms, and emergency treatment of adverse reaction. In parallel, novel knowledge on the pathogenesis of food allergy is opening the way to new trials investigating several allergen-specific and allergen non-specific therapies, aiming to prevent the development of food allergy and acquire a persistent food tolerance.
