La Copine

Abrams Books 出版
2025/08/09 出版

Bon App矇tit, Best New Cookbooks of Spring 2026From La Copine, a destination restaurant near Joshua Tree, comes a beautiful debut cookbook with stories of life in the desert and recipes that capture a unique approach to California cooking Out in the California desert near Joshua Tree, La Copine spins its own kind of magic, powered by business and life partners Claire Wadsworth and Nikki Hill, the drama of the landscape, the eclectic local population, and of course, the irresistible food. With celebrity clientele and glowing reviews in the New York Times, Eater, Vogue, and others, this restaurant is beloved by California visitors and locals alike. In their debut cookbook, La Copine, Wadsworth and Hill share stories of their love, life, community, and the spirit of La Copine, one delicious recipe at a time. Dubbed the West Coast's answer to Via Carota's Rita and Jody, Wadsworth and Hill are passionate, community-driven, California cooks with a deep love for each other and the people around them. They welcome their guests to La Copine (which means "girlfriend" in French) with open arms, create a safe haven for the queer community outside of Los Angeles, and have a deep sense of care and pride for everything they put on the plate. Home cooks will want to adopt the restaurant's "California soul" style: veggie-forward, innovative yet comforting, light enough for lunch, yet substantial enough to gather around and linger over. From "hunky" salads (as described by the New York Times) to special-occasion sandwiches to summery, boldly flavored grilled meats and vegetables to simple, no-bake desserts, La Copine's food roams far and wide but always imparts a sense of home. More than the recipes, though, Wadsworth and Hill's backstory as a couple, the business they've built together, and the community they've found in the desert, make for an armchair trip through the remote and spectacular setting, as well as a mission statement for creating a life on one's own terms.

Eaterland

Eater  著
Abrams Books 出版
2025/08/09 出版

Eaterland is popular website Eater's mouthwatering deep dive into over 85 quirky regional dishes that truly define American cuisine, with recipes, essays, and stories from local celebrities and chefs When casual food lovers attempt to define stereotypical "American cuisine," they often lean into foods like hamburgers, hot dogs, and pizza. Perhaps some understand that everything from Cajun cuisines to soul food is as American as apple pie. But it takes a certain kind of obsessiveness--one Eater is known for--to really investigate what American food means. In Eaterland, national publication and go-to site for restaurant recommendations, recipes, and food stories, Eater, maps out where to eat, what to eat, and how to eat food that is quintessentially, unequivocally American. Divided into eight regions, this cookbook is filled with recipes, introductions from notable local chefs or celebrities, and recommendations for restaurants that serve the eclectic, multicultural cuisines that make up American food. From more recognized dishes like Detroit-Style Pepperoni Pizza and New York's Chopped Cheese to the french fry-topped Pittsburgh Salad and the Midwest's Funeral Potatoes, this almanac is an ode to American food. Essays call attention to local ingredients unique to their region, like New Mexican green chiles, the glossaries have every region's essential dishes, and deeply personal stories about American culture will encourage readers to learn more. This book also celebrates the history of food in the United States, centering Indigenous recipes and cooking techniques, highlighting immigrant influences on local favorites, and illustrating how renowned chefs like Kwame Onwuachi and Tiffany Derry are recontextualizing and modernizing food in America. For anyone who's wanted to experience Maryland crab soup, toasted ravioli from St. Louis, and Kentucky's renowned Hot Brown sandwich all without leaving their kitchen, this book is a perfect guide from Eater, the authority on where to eat and why it matters.

Down South + East

Ron,Hsu  著
Abrams Books 出版
2025/08/09 出版

Chinese American chef Ron Hsu shares original recipes exploring innovative Asian-influenced dishes via the rich larder of the American South in his debut cookbook, Down South + EastWith mouthwatering ingredient combinations, a fresh take on Southern food, and comforting-yet-creative recipes, Down South + East helps home cooks across the country look at everyday ingredients in new ways and discover exciting possibilities for them.Ron Hsu grew up a restaurant kid, surrounded by the delicious smells and flavors of Chinese food at Hunan Village, a set of seven restaurants his parents ran in Georgia from 1980 to 2008. Now, with culinary school, seven years at the world-famous Le Bernardin--where he moved from line cook to creative director--and his Michelin-starred restaurant Lazy Betty under his belt, Hsu is more than ready to share his recipes inspired by his Chinese childhood in the American South. The delicious results include recipes like cornbread made with deeply flavored lap cheong (Chinese sausage) standing in for pork cracklins and char siu style pork lacquered with a sorghum syrup-bourbon glaze. Laced with ginger, the potlikker of gently braised watercress can throw down with that of any collard greens, and a soy sauce and shiitake mushroom gravy enhances traditional meatloaf.A deep section on the Southern and Chinese pantry sets the stage for the recipes to come, exploring the ingredients most common in both cuisines--from pork, rice, peanuts, okra, cabbage, and peaches to sorghum, ketchup, soy sauce, and five spice--and redefining what is considered Southern food.

Chef Celeste's Louisiana Kitchen

Celeste,Gill  著
LSU Press 出版
2025/07/24 出版

Chef Celeste Gill began to learn traditional southern cooking from her mother and grandmother at the age of four. Raised in Detroit and trained as a chef in Hawaii, she ultimately chose to make her home in South Louisiana, where she has worked to promote farm-to-table cooking and eating, and to help fledgling chefs build their confidence to make even the most intimidating traditional Louisiana dishes. At the center of Chef Celeste's practice is support and mentorship for new cooks as they learn to feel comfortable in the kitchen. Chef Celeste's Louisiana Kitchen continues this work with recipes that are easy to follow, breaking down challenging preparation procedures into manageable directions and simple-to-understand steps. The recipes celebrate the bounty of Louisiana's native plants and animals, highlighting the use of fresh ingredients, but with adjustments possible for chefs outside of the state or without easy access to fresh produce and meats. Food is more than sustenance: it can be a refuge for some, therapy for others, and community for all. The simple act of preparing and sharing a meal can forge connections, and this book serves as a bridge to the rich world of Louisiana cuisine.

Cooking in the Deep-South with Chef Bob

AuthorHouse 出版
2025/07/23 出版

The words "Deep-South Cuisine" are often misunderstood. Not to be confused with Cajun or Creole, which is strictly Louisiana, Deep South Cuisine is instead the product of the whole Southern culture, with hospitality and soul food. In writing this book, it is my intention to define Deep-South cooking as a regional cuisine and dispense with the cliche, that everything in the Deep-South is fried. Well, there is a good bit of that, but there is so much more, as you are about to discover. First of all, the Deep-South consists of those states below the Mason Dixon line with the exception of Louisiana, Texas, and Florida. Louisiana is a culinary world of its own, different from anywhere else on Earth. Texas is Southwestern style all the way, and Florida is as far away from Deep-South Cuisine as Canada. Secondly, Deep-South cooking is deeply rooted in long-practiced traditions, and is as much a part of the culture of the region as wine is to France. A descendent of share cropping settlers and Cherokee blood, I grew up in the Deep- South living on a diet of fried green tomatoes, black eye peas, turnip greens, grits, corn bread, biscuits and gravy, fried chicken, just picked peaches made into cobbler, and I'll never forget the homemade ice cream. I want to give you the reader, a chance to escape into my world, the Deep-South. Although it is a subject that covers many different styles and cultures, mission is simple; to teach Deep-South cooking using my experience as a chef, and give you a unique insight into producing creative meals for your family and friends. Y'all enjoy!

It compiles more than eighty recipes, each meticulously researched and tested by Onjium---a cultural research institute and Michelin-starred restaurant in Seoul dedicated to reviving and modernizing Korean culinary traditions, preserving past tastes for future generations. The book includes a series of cultural essays, interspersed throughout, grounding readers in Korean cuisine and culture.
