Production of pancakes with millet flour in Ghana
Diploma Thesis from the year 2023 in the subject Tourism - Miscellaneous, course: Final Year Project, language: English, abstract: The study identified millet as an important grain in the production of pancakes in Ghana, truncating excessive wheat importation and ensuring self-reliance. Accordingly, millet flour was produced, and a standardised recipe developed for its use in the preparation of pancake. These pancakes were encoded and submitted for a sensory evaluation of 22 tasters. They gave their valuation on the colour, taste, texture, flavour, appearance and overall quality of each product following a hedonic scale of 9 points: 9 (I like extremely) to 1 (I don't like). The finding of the research indicates that the objectives of the had been achieved. However, having gone through the various procedures of testing the pancakes prepared from millet flour, the following were observed. The determinants (color, taste, flavor, texture and appearance) are a good technique that could be used to add value to it. The determinants as well as the packaging material used does not only attract consumers but also improved the quality, standard and hygiene of the product. Finally, it must be emphasized that, if all the necessary recommendations suggested from the findings of this research, it would advance the government of Ghana's call for reduce importation of wheat, while ensuring food security.

Consequently, more tourism destinations are being promoted globally for socio-economic development through the revenue generated by it. The tag of UNESCO-enlisted WHS is used as a powerful instrument for tourism campaigns. Nevertheless, the WHS belongs to all the peoples of the world, irrespective of the territory on which they are located. All those sites have become assets for the tourism industry in many countries. On the one hand, tourism provides financial support to preserve these sites. On the other hand, uncontrolled tourism practices cause severe socio-cultural impacts by compromising its OUV. Therefore, a balance between tourism development and protection of WHS must be ensured by evolving a model to promote and sustain tourism in the destination Mahabalipuram. Hoteliers have utterly failed in the duty of sharing resources for protection of ecology and environment. However, different categories of accommodation operators are driven towards maximizing profits without having concern for sustainable tourism development. Majority of hoteliers are more tourists centric without adhering to the environmental management practices directly leading to depletion of resources. Thus, questions for the sustainability of Mahabalipuram as tourism destination need to be answered with proper justification. In order to find practical solutions for sustainable tourism development, perceptions of residents and tourists have been studied to guide planners to implement the principles of sustainable tourism. An in-depth study with the following objectives has revealed several hidden obstructions for the development of tourism in a sustainable manner.
Ecovillages as Destinations. Potential of Educational Tourism for Coping with Climate-Anxiety

Climate-anxiety is a growing mental health issue among the public and particularly among students in sustainability-related fields in Higher Education Institutions (HEI). The research field of climate-anxiety has emerged after 2007, and it also relates to other increasingly relevant mental health responses to environmental destruction, such as eco-anxiety. This study examines how HEI can better address climate-anxiety. Specifically, it investigates whether non-formal actors like ecovillages can help students to cope with climate-anxiety. In this context, climate-anxiety is party attributed to the way HEI teach about it. While education on climate change overly addresses cognitive learning, social and emotional learning are neglected. Ecovillages are increasingly recognising their role in Education for Sustainable Development (ESD) and, through novel pedagogical approaches, can balance the shortcomings of HEI. Exploring the capacity of ecovillages for ESD and coping with climate-anxiety, the study includes five case studies of distinct ecovillages on three continents. The aim is on how educational tourism to ecovillages can help students to cope with climate-anxiety. This study found that lecturers do not sufficiently address climate-anxiety in HEI or Student Mental Health Services (SMHS) in Sweden.
