The American Housewife
Fantastic history of early-1800's cooking & homemaking!Nearly 400 recipes for just about anything that could be eaten at the time -including pickles & jams - and many household tips on subjects such as removing stains, making glues and dyes, repairing broken dishes, etc. I'm quite sure it was written by an educated, fairly well-to-do American homemaker, as there were very few uniquely European spellings, phrases, or words; her (I assume) grammar & spelling are near-perfect. One gets a good look at what living was like during that era, certainly making me appreciative of my gas range, dishwasher, and refrigerator (rather than hearth cooking, and, if lucky, an icebox.) While it is somewhat dry to read cover-to-cover, I'm sure it is historically correct, including some ingredients that even Wikipedia doesn't know, and use of substances (mostly chemicals ) that our granny-state government has restricted or banned from non-commercial use. The book does have a functional Table of Contents, (starting about page 6) which should have earned it six stars. I recommend it book without reservation. (Marian Otis)
Gastronativism
Winner, Gourmand World Cookbook Awards - Food - Food Heritage - USA Nominee, Book Award in Food Issues and Advocacy, James Beard Foundation The Italian political right is outraged by halal tortellini and a pork-free lasagna served at the Vatican. In India, Hindu fundamentalists organize attacks on Muslims who sell beef. European anti-immigrant politicians denounce couscous and kebabs. In an era of nationalist and exclusionary movements, food has become a potent symbol of identity. Why has eating become so politically charged--and can the emotions surrounding food be redirected in a healthier direction? Fabio Parasecoli identifies and defines the phenomenon of "gastronativism," the ideological use of food to advance ideas about who belongs to a community and who does not. As globalization and neoliberalism have transformed food systems, people have responded by seeking to return to their roots. Many have embraced local ingredients and notions of cultural heritage, but this impulse can play into the hands of nationalist and xenophobic political projects. Such movements draw on the strong emotions connected with eating to stoke resentment and contempt for other people and cultures. Parasecoli emphasizes that gastronativism is a worldwide phenomenon, even as it often purports to oppose local aspects and consequences of globalization. He also explores how to channel pride in culinary traditions toward resisting transnational corporations, uplifting marginalized and oppressed groups, and assisting people left behind by globalization. Featuring a wide array of examples from all over the world, Gastronativism is a timely, incisive, and lively analysis of how and why food has become a powerful political tool.

The 30-Minute Air Fryer Cookbook
An air fryer shares similarity to a convection oven . Both cook food using hot air. But unlike an oven, an air fryer doesn't require the use of oil. The food gets its crispiness from contact with super-heated air and the natural sugar content of the food. Air fryers use infrared or halogen bulbs as a heat source. The bulbs are placed in a chamber above the food. There's also a fan to circulate the air and push it out towards your food. This creates convection, similar to an oven, which helps food cook evenly. Air fryers offer many advantages when compared to other cooking methods: Food cooks up to 40% faster than an oven. A hotter heat source means foods can get crispy on the outside without overcooking on the inside! A pressure sensor adjusts the temperatures automatically for even cooking, whether delicate fish or chicken wings! An air fryer uses one-third of oil compared to conventional deep frying. An air fryer doesn't actually fry food, rather it bakes or roasts food in super-hot air temperatures. This allows and let the food to cook much faster than using traditional methods like baking or roasting, which often requires a long time and more fat for optimal results . This is one reason why food cooked in an air fryer doesn't taste burnt. This book covers ? Breakfast recipes ? Vegetables and sides ? Meat recipes ? Fish and seafood recipes ? Snacks and dessert And a lot more! Air fryers are ideal for making a whole host of tasty dishes. Because the air-frying technology is brand new, we're really just starting to figure out all of the potential uses. Some people use air fryers to make deep fried chicken, but you can also make many different types of foods including French fries, paleo bread, banana chips, and even oatmeal pancakes! And yes - you can even make ice cream!
