The Hoosier Mama Book of Pie
When Paula Haney first opened the Hoosier Mama Pie Company on March 14, 2009 (Pi day, appropriately enough), she worried whether her new business could survive by specializing in just one thing. When she opened her storefront that morning and saw a line around the block, she realized she had a more immediate problem: had she made enough pie? The shop closed early that day, but it has been churning out plenty of the Chicago's most delectable pies ever since. Since starting her career as a pastry chef at Trio, one of Chicago's top fine-dining restaurants, Haney dreamed of opening her own pie shop. Exhilarating and exhausting days spent creating fabulous new desserts to keep up with the restaurant's head chef--a then-unknown Grant Achatz, who would go on to culinary superstardom--left Haney in search of classic comfort food on her days off. Her disappointment in being unable to find a good slice of pie in all of Chicago led her to one conclusion: she needed to open her own store. Specializing in hand-made, artisanal pies that only use locally sourced and in-season ingredients, Hoosier Mama Pie Company has become a local favorite and a national destination gaining praise from Bon Appetit, the Food Network, and Food & Wine as one of the top pie shops in the country. Now, The Hoosier Mama Book of Pie delivers all the sumptuous secrets of buttery crusts, fruity fillings, creams and custards, chess pies, over-the-top pies, and even the stout and hearty savory pie. The practically oriented, easy-going, and accessible style of this book will help bakers both new and old make the perfect pie for every occasion. On top of all of this, The Hoosier Mama Book of Pie also includes tips on technique, fascinating historical anecdotes, and an emphasis on special seasonal recipes, as well as quiches, hand pies, and scones. This beautifully photographed and designed book has the classic retro feel of the mid-20th century golden age of pie, and all the warmth and personality of the Hoosier Mama Pie Co.'s cozy Chicago storefront. The focus on using local produce and employing the farm-to-table philosophy gives the book a contemporary twist, helping home bakers make the freshest, most delicious pies imaginable. Now readers can take a little piece of the Hoosier Mama Pie Company anywhere they go.

From Sage and Raisin Scones to Zucchini Pickles, every herb has its day. Jane Wilson Morton has been cultivating and cooking with fresh herbs for over 20 years. A certified Home Economist, Jane was the Culinary Arts Coordinator for the Great Neck Adult Program, an adjunct lecturer at Queens College, and the writer and producer of educational filmstrips. She studied with Giuliano Bugialli in Italy, Simone Beck in France, Bruno Ellmer at the Culinary Institute of America in Hyde Park, New York, and others in New York City, California, and Thailand. Soups, Stews and Chowders
Soups, Stews, and Chowders bring credibility to the idea that America is a great melting pot. Philadelphia Pepper Pot Soup has its origins in George Washington's kitchen at Valley Forge during the winter encampment. Pigeon Soup was a particular favorite of Thomas Jefferson as pigeons were plentiful around Monticello. In colonial kitchens the predominate utensil was a large kettle. Cooks throughout the centuries have utilized whatever food was available to prepare delicious, invigorating, and warming soups for their families. Sheilah Kaufman assembles over 70 soup recipes including Dill Pickle Soup, Pumpkin Mushroom Soup, Corn Chowder, and Clam Chowder to satisfy your nutritional urges. Some soups are hot and some are cold, but each recipe is elegant yet simple to prepare with easy clean-up. Also included is a concise history of soups, stocks, and broths, notes about the origin of the terms we use today, and helpful hints to make your soup the envy of your neighborhood. Sheilah Kaufman learned to bake at the age of 8, when she craved chocolate desserts like brownies, fudge, chocolate chip cookies, and chocolate cake with chocolate icing. Her mom's version of dessert was either an un-iced sponge cake or vanilla wafers! Teachers from La Varenne in Paris and Le Cordon Bleu gave Sheilah her formal training in French cuisine. In 1966 Sheilah began teaching international cooking classes under the name French Cuisine Plus. Sheilah is the author of more than sixteen cookbooks including her bestselling French Cuisine Plus, More French Cuisine Plus, A Chicken in Every Pot, Easy Ways to Elegant Cooking, and Sheilah's Fearless, Fussless Cooking. Glamour magazine says "If you like to entertain, Sheilah's Fearless Fussless Cookbook should be your best friend." During the 1970s Sheilah began traveling the US lecturing and teaching with appearances on many TV and radio programs. A frequent contributor to many national publications including Modern Bride, International Travel, and Magna, Sheilah is the food editor for Washington Jewish Week, and the gift basket and fancy food editor for Gift & Decorative Accessories Magazine. VB6
If you're one of the millions who have thought of trying a vegan diet but fear it's too monotonous or unfamiliar, VB6 will introduce a flexible way of eating that you can really live with for life. Six years ago, an overweight, pre-diabetic Mark Bittman faced a medical directive: adopt a vegan diet or go on medication. He was no fan of a lifelong regimen of pills, but as a food writer he lived--and worked--to eat. So neither choice was appealing. His solution was a deal with himself. He would become a "flexitarian." He adopted a diet heavy in vegetables, fruits, and grains by following a healthy vegan diet (no meat, dairy, or processed foods) all day. After 6:00 p.m. he'd eat however he wanted, though mostly in moderation. Beyond that, his plan involved no gimmicks, scales, calorie counting, or point systems. And there were no so-called forbidden foods--he ate mostly home-cooked meals that were as varied and satisfying as they were delicious. He called this plan Vegan Before 6:00 (VB6 for short), and the results were swift and impressive. Best of all, they proved to be lasting and sustainable over the long haul. Bittman lost 35 pounds and saw all of his blood numbers move in the right direction. Using extensive scientific evidence to support his plan, the acclaimed cookbook author and food policy columnist shows why his VB6 approach succeeds when so many other regimens not only fail, but can actually lead to unwanted weight gain. He then provides all the necessary tools for making the switch to a flexitarian diet: lists for stocking the pantry, strategies for eating away from home in a variety of situations, pointers for making cooking on a daily basis both convenient and enjoyable, and a complete 28-day eating plan showing VB6 in action. Finally, Bittman provides more than 60 recipes for vegan breakfasts, lunches, and snacks, as well as non-vegan dinners that embrace the spirit of a vegetable- and grain-forward diet.

Modern Maple
Maple syrup is a genuine product of the north, made only in the northeastern quarter of the United States and adjoining Canadian provinces. The Ojibwe and Dakota used it as a seasoning and also cooked it down to a crystallized state to preserve and transport it. Today, locally produced pure maple syrup is regarded as an artisan product, prized by cooks and bakers alike. Minnesota and Wisconsin are home to numerous syrup producers, from family-run operations that do everything from collection to boiling and bottling to large packagers that buy raw sap to process and sell. Modern Maple celebrates this local treasure in ways both traditional and contemporary, with seventy-five recipes using maple to season, flavor, and sweeten dishes ranging from traditional breakfast favorites to appetizers, sandwiches, vegetables, main courses, breads, and desserts. Grilled Radicchio with Maple Drizzle and Goat Cheese, Pecan-Crusted Chicken with Maple Apples, Cardamom-Maple Swirl Bread, Roasted Carrot-Ginger Soup with Maple, and Maple Baklava are just a few of the delights that await. A special section on backyard syruping gives complete but easy instructions for making homemade syrup on a very small scale--a fun and interesting hobby that pays dividends in the kitchen. The Northern PlateModern Maple is the second book in the Northern Plate series, following Rhubarb Renaissance. Each book in the series celebrates a specific food from the bounty of the Upper Midwest. Teresa Marrone is the author of Cooking with Wild Berries and Fruits of Minnesota, Wisconsin, and Michigan; Abundantly Wild: Collecting and Cooking Wild Edibles in the Upper Midwest; and The Back-Country Kitchen: Camp Cooking for Canoeists, Hikers, and Anglers.

Within just a few weeks, the bounty has expanded exponentially and, before too long, those connected to a crop share or whose market basket is perhaps a bit too accommodating may be wondering: Just what should I do with fennel? And how can I possibly consume all of this spinach?Tricia Cornell comes to the rescue in Eat More Vegetables, 135 recipes arranged seasonally to correspond with our northern plenty, from a refreshing cold beet soup in the heat of summer to a healthy and comforting butternut squash chili for cold winter nights; from zucchini fritters any kid will love to an adults-only melon-vodka slushie. But this book brings value far beyond creative recipes. Introductions to the many vegetables, fruits, and herbs stacked on farmers' tables and in the grocery store help home cooks see delicious possibilities in kale, cabbage, or tomatoes, while tips for preparation and storage encourage us to make the most of our growing season and extend the goods through fall and into winter, until the markets open up once again.

Part One is a comprehensive overview of seafood lore that includes chapters on how to select fish; how to clean, fillet, and store it; basic seafood cooking techniques; and full discussions of seafood safety and the overwhelming health benefits of adding fish to your diet. Part Two is a collection of some 250 recipes for hors d'oeuvres and appetizers, soups, salads, and main courses, including special sections on grilling and microwaving.
