Cooking With Wholegrains
This short, charming little primer in wholegrain cookery was first published in 1947--long before healthy eating was a national obsession. Reprinted numerous times, it became a pioneer cookbook: one of the first to reintroduce the joys of wholegrain recipes to the American home cook. Vrest Orton and Mildred Ellen Orton, a husband-and-wife team who also operated a stone mill, a set of country stores, and a mail-order catalog, offer readers a simple, warm, and welcoming approach to such regional classics as Southern Johnnycake and Vermont Indian Pudding. Along the way, they offer an impassioned argument for wholegrains, as well as a witty critique of the refined, shelf-stable flours that had become so seductive to postwar cooks. Today, a new audience of readers is discovering that wholegrains are not only healthy, but tasty and comforting as well. The Ortons' delightful guide ranks as one of America's most important grain cookbooks; it both preceded the current health craze and remains true to its present concerns. Cooking with Wholegrains is sure to find a place in every natural-food kitchen. Mrs. Orton celebrated her 99th birthday in 2010 and still lives in Weston, Vermont on the Village Green.

Home Production of Quality Meats and Sausages
Home Production of Quality Meats and Sausages - The Making of a Sausage Maker. There has been a need for a comprehensive one-volume reference on the manufacture of meats and sausages at home. There are many cookbooks loaded with recipes which do not build any foundation for the serious hobbyist to follow. This leaves him with little understanding of the sausage making process and afraid to introduce his own ideas. There are highly technical and expensive professional books that are written for meat plant managers or graduate students pursuing a master's degree in meat technology. Unfortunately, these works are written in such difficult technical terms, that most of them are beyond the comprehension of an average person. Home Production of Quality Meats and Sausages bridges the gap that exists between highly technical textbooks and the requirements of the typical hobbyist. Technical terms were substituted with their equivalent but simpler meanings and many photographs, drawings and tables were included. The book covers topics such as curing and making brines, smoking meats and sausages, U.S. Standards, making fresh, smoked, emulsified, fermented and air dried products, making special sausages such as head cheeses, blood and liver sausages, low salt, low fat and Kosher products, hams, bacon, butts and loins, poultry, fish and game, safety, creating your own recipes and much more... To get the reader started 172 recipes are provided which were chosen for their originality and historical value. Although recipes play an important role in these products, it is the process that ultimately decides the sausage quality. It is perfectly clear that the authors don't want the reader to copy the recipes only: "We want him to understand the sausage making process and we want him to create his own recipes. We want him to be the sausage maker."
In Search of the Lost Taste
Joshua Ploeg's cooking blows my mind so much that a secret door opens in the back of my head and white doves, musical notes, and winged horses fly out. His cooking is transcendent: dangerous, strange and perfect. It's full of colorful tastes that explode in your mouth like Pop Rocks -flavor combinations you never thought possible. Crazy alchemy. Freaky magic. Joshua's been in a bunch of hardcore bands and he brings all the good things punk rock gave us: risk, passion, creativity, and weirdness; then he applies them to his meals.
Grains, Greens, and Grated Coconuts
"Other books have ably explored India's far southern territory, but Ms. Ramachandran reveals amazing range and depth in Kerala's Hindu vegetarian traditions." The New York Times review "Ammini Ramachandran, a Texas based food writer with roots in the Indian state of Kerala, has self published an authoritative cookbook cum memoir, Grains, Greens, and Grated Coconuts, on that region's elaborate, nuanced cuisine."-Saveur February, 2008 "Recipes that make me want to rush to the kitchen, intriguing techniques that could be used with other cuisines, fascinating personal stories about growing up in a big Kerala household, all embedded in a deep understanding of Kerala as a pivot of Asian history. It's a wonderful tribute to Kerala and a stunning gift for the rest of us."Rachel Laudan, author of The Food of Paradise: Exploring Hawaii's Culinary Heritage "Grains, Greens, and Grated Coconuts is a jewel of a cookbook-from its authentic recipes (many published here for the first time) to Ammini Ramachandran's evocative personal anecdotes of Kerala's culinary traditions. It is at once scholarly, yet accessible, and especially charming for its delicious recipes and intriguing stories from the royal kitchens of Kochi."- Grace Young, author of The Wisdom of the Chinese Kitchen

How to Pick a Peach
Critics greeted Russ Parsons' first book, How to Read a French Fry, with raves. The New York Times praised it for its "affable voice and intellectual clarity"; Julia Child lauded it for its "deep factual information." Now in How to Pick a Peach, Parsons takes on one of the hottest food topics today. Good cooking starts with the right ingredients, and nowhere is that more true than with produce. Should we refrigerate that peach? How do we cook that artichoke? And what are those different varieties of pears? Most of us aren't sure. Parsons helps the cook sort through the produce in the market by illuminating the issues surrounding it, revealing intriguing facts about vegetables and fruits in individual profiles about them, and providing instructions on how to choose, store, and prepare these items. Whether explaining why basil, citrus, tomatoes, and potatoes should never be refrigerated, describing how Dutch farmers revolutionized the tomato business in America, exploring organic farming and its effect on flavor, or giving tips on how to recognize a ripe melon, How to Pick a Peach is Parsons at his peak.
Alkalines Foods Cookbook
I was like most people when finding out about alkalinity, I want to know, what can I eat and how do I prepare and cook it? Being a Chef and herbalist for over 25 years, made it a lot easier for me than most to prepare, alter and come up with new cooking ideas. Some are under the impression that once you cook something that's alkaline you can destroy its alkalinity. This is further than the truth. For an example, tomatoes contain lycopene, a form of antioxidant. Raw tomatoes have a total antioxidant potential of about 80, but if you cook the tomatoes the antioxidant potential goes up to about six-fold. This is because the raw tomato has been transformed to trans-lycopene in the cooked version do to the heat infusion, and trans-lycopene is much more readily absorbed by the body. This is the same with most foods. Finally a book that gives you the alkaline food list and how to prepare and cook them, so you can remain healthy, energized, and vitalized.

Field to Feast
The phrase, straight shooter, is as American as apple pie, and there was a time when those words were an important link to another time-honored phrase, putting meat on the table. Today, however, most of us no longer live close to the land and we tend to associate the essentials for meal preparation with grocery store shelves and showcases rather than fields and forests. Yet, enjoying a game feast brings a special sense of self-satisfaction. Sitting down to a fine meal featuring game you have killed, cleaned and cooked offers a reward no food from a restaurant or meat market can match. The folks at Remington Arms Company, along with the untold millions of Americans who have hunted with Remington guns and ammunition for generation, are keenly aware of this aspect of the sporting experience. For them, the allure of the quest remains strong, and appreciation of the fact that the sportsman eats what he kills is a defining aspect of hunting ethics. This book is written with that sense of what is right and proper firmly in mind, but it is also intended to provide a culinary excursion into realms of pure pleasure. With the exception of a chapter where various Remington employees, past and present, share their favorite ways of preparing food, the recipes come from Jim and Ann Casada. For them, wild fare and its preparation is an integral part of daily life. Both grew up in homes where game on the family table was a mainstay of life. Over the years their shared background in game cookery, along with a love of the culinary arts, has led to the development of hundreds of recipes and publication of a number of widely acclaimed cookbooks. In these pages the Casadas offer a wide array of recipes ranging across the whole spectrum of game cookery. From sumptuous dishes featuring prime cuts of venison that would do a four-star restaurant proud to simple yet delicious soups and stews, you will find something for every taste. The authors recipes mirror their cooking philosophy.
Soup
Recipes from the classic period of English cookery, approximately 1660 to 1890, as a handy compendium for the curious, saving them the need to own a complete shelf of antiquarian books. Soup was never intended as a stand-alone dish. At its first showing it was merely the broth from a stew: the meat served in one dish, the liquid in another - we are familiar with the idea from the French 'pot-au-feu' or 'bouillabaisse'. And the very word 'soup' referred to the 'sops' of bread put at the bottom of the dish to soak up and thicken the liquor. Eileen White has selected texts that explains the place of soup in our diet, and which offer recipes which can be tried today (and just a few that are better to read than to cook).Eileen White is an historian who has worked mainly in the fields of early English drama and the history of food.

Early American Herb Recipes
For early American households, the herb garden was an all-purpose medicine chest. Herbs were used to treat apoplexy (lily of the valley), asthma (burdock, horehound), boils (onion), tuberculosis (chickweed, coltsfoot), palpitations (saffron, valerian), jaundice (speedwell, nettles, toad flax), toothache (dittander), hemorrhage (yarrow), hypochondria (mustard, viper grass), wrinkles (cowslip juice), cancers (bean-leaf juice), and various other ailments. But herbs were used for a host of other purposes as well -- and in this fascinating book, readers will find a wealth of information on the uses of herbs by homemakers of the past, including more than 500 authentic recipes, given exactly as they appeared in their original sources.Selected from such early American cookbook classics as Miss Leslie's Directions for Cookery, Mary Randolph's The Virginia Housewife, Lydia Child's The American Frugal Housewife, and other rare publications, the recipes cover the use of herbs for medicinal, culinary, cosmetic, and other purposes. Readers will discover not only how herbs were used in making vegetable and meat dishes, gravies and sauces, cakes, pies, soups, and beverages, but also how our ancestors employed them in making dyes, furniture polish, insecticides, spot removers, perfumes, hair tonics, soaps, tooth powders, and numerous other products. While some formulas are completely fantastic, others (such as a sunburn ointment made from hog's lard and elder flowers) were based on long experience and produced excellent results.More than 100 fine nineteenth-century engravings of herbs add to the charm of this enchanting volume -- an invaluable reference and guide for plant lovers and herb enthusiasts that will "delight and astound the twentieth-century reader."
