America Celebrates
The "menu driven" format of America Celebrates, i.e., each "Holiday Section" contains menu recommendations which include traditional foods or which will accompany a main course well. For example, the New Year's Day menus include Saut矇ed Red Cabbage and Black Eyed Peas to recognize and honor the tradition that cabbage and black eyed peas on New Year's Day will bring good luck and financial well-being. The format is designed to assist and simplify the decision, purchasing and preparation process. However, all recipes are individually accessible and may be printed and used whenever and of course, with any other foods or dates you choose. Many of the menus are very flexible and usable for a variety of special and/or family events other than holidays. Each recipe has been prepared and many are photographed so that you have a good visual reference and each has been simplified to the extent possible to reduce wasted effort. Being a practicing "maker of market lists" (which are made to be given over to someone else who usually purchases at least 70% of the items on the list - then practices that popular art of "impulse buying" substituting ice cream, magazines and bubble bath), I am acutely aware of the need for the shoppers list. For that reason, the market list for each menu is believed to be "all inclusive", and allows you to edit the printed list as you wish and exclude any "staple items" which may already be in your pantry or substitute ingredients or other supplies to meet your individual choices. And, speaking of substitutions - about the only substitute I have found for "advance preparation" is "more advance preparation". Some recipes or foods just REQUIRE overnight marinating or resting or making/rising. And to get the results you want from your work in the kitchen, it is important to review your menu and your recipes at least one day before you anticipate cooking/preparing each dish. My background includes business ownership and management, political involvement in the design and implementation of legislation and regulations associated with caring for the elderly and nursing home regulations, ownership and operation of a 300 ton recreational vehicle (a riverboat paddle wheeler) serving 200 - 250 guests at weddings, family reunions, college graduation parties, and large law and oil company office parties/functions and willingly preparing foods, decorations and accommodations for family and friends for virtually every event identified in America Celebrates. The book represents the "tip of the iceberg" as I explored the totality of American celebrations and how to bring the most celebrated and popular foods prepared for these celebrations to you in print and reflect my personal experiences I have enjoyed in the process. The "menu driven" format of America Celebrates, i.e., each "Holiday Section" contains menu recommendations which include traditional foods or which will accompany a main course well. For example, the New Year's Day menus include Saut矇ed Red Cabbage and Black Eyed Peas to recognize and honor the tradition that cabbage and black eyed peas on New Year's Day will bring good luck and financial well-being. The format is designed to assist and simplify the decision, purchasing and preparation process. However, all recipes are individually accessible and may be printed and used whenever and of course, with any other foods or dates you choose. Many of the menus are very flexible and usable for a variety of special and/or family events other than holidays. Each recipe has been prepared and many are photographed so that you have a good visual reference and each has been simplified to the extent possible to reduce wasted effort. Being a practicing "maker of market lists" (which are made to be given over to someone else who usually purchases at least 70% of the items on the list - then practices that popular art of "impulse buying" substituting ice cream, magazines and bubble bath), I am acutely aware of the need for the shoppers list. For that reason, the market list for each menu is believed to be "all inclusive", and allows you to edit the printed list as you wish and exclude any "staple items" which may already be in your pantry or substitute ingredients or other supplies to meet your individual choices. And, speaking of substitutions - about the only substitute I have found for "advance preparation" is "more advance preparation". Some recipes or foods just REQUIRE overnight marinating or resting or making/rising. And to get the results you want from your work in the kitchen, it is important to review your menu and your recipes at least one day before you anticipate cooking/preparing each dish. My background includes business ownership and management, political involvement in the design and implementation of legislation and regulations associated with caring for the elderly and nursing home regulations, ownership and operation of a 300 ton recreational vehicle (a riverboat paddle wheeler) serving 200 - 250 guests at weddings, family reunions, college graduation parties, and large law and oil company office parties/functions and willingly preparing foods, decorations and accommodations for family and friends for virtually every event identified in America Celebrates. The book represents the "tip of the iceberg" as I explored the totality of American celebrations and how to bring the most celebrated and popular foods prepared for these celebrations to you in print and reflect my personal experiences I have enjoyed in the process. Recipes From a Traditional Foods Kitchen
Let not the vanity of the cook induce you to forget the duty of a servant, which is, in the first place, to please his master: be particular, therefore, in enquiring what things please your employer. Many capital cooks will be found for great feasts and festivals, but very few for every-day service, because this is not "eye-service," but the service of principle and duty. Few, indeed, there are who will take equal pains to make one delicate dish, one small exquisite dinner, for the three hundred and sixty-five days in the year; yet this is by far the most valuable attainment of the two. The great secret of all cookery consists in making fine meat jellies; this is done at less expence than may be imagined by a careful, honest cook. For this purpose let all parings of meats of every kind, all bones, however dry they may appear, be carefully collected, and put over a very slow fire in a small quantity of water, always adding a little more as the water boils down. Skim this juice when cool: and, having melted it a second time, pass it through a sieve till thoroughly pure: put no salt or pepper; use this fine jelly for any sauce, adding herbs, or whatever savoury condiments you think proper, at the time it is used. Be careful all summer long to dry vegetables and herbs. Almost every herb and vegetable may be dried and preserved for winter use; for on these must chiefly depend all the varied flavours of your dishes. Mushrooms and artichokes strung on a string, with a bit of wood knotted in between each to prevent their touching, and hung in a dry place, will be excellent; and every species of culinary herb may be preserved either in bottles or paper bags.

Also, she has omitted every thing which may not, by the generality of tastes, be considered good of its kind, and well worth the trouble and cost of preparing. The author has spared no pains in collecting and arranging, perhaps the greatest number of practical and original receipts that have ever appeared in a similar work; flattering herself that she has rendered them so explicit as to be easily understood, and followed, even by inexperienced cooks. The directions are given as minutely as if each receipt was "to stand alone by itself," all references to others being avoided; except in some few instances to the one immediately preceding; it being a just cause of complaint that in some of the late cookery books, the reader, before finishing the article, is desired to search out pages and numbers in remote parts of the volume.

In order to carry out my instructions properly, a few utensils will be necessary. Industry, good health, and constant employment, have, in many instances, I trust, enabled those whom I now address to lay by a little sum of money. A portion of this will be well spent in the purchase of the following articles: A cooking-stove, with an oven at the side, or placed under the grate, which should be so planned as to admit of the fire being open or closed at will; by this contrivance much heat and fuel are economized; there should also be a boiler at the back of the grate. By this means you would have hot water always ready at hand, the advantage of which is considerable. Such poor men's cooking-stoves exist, on a large scale, in all modern-built lodging-houses. Also, a three-gallon iron pot with a lid to it, a one-gallon saucepan, a two-quart ditto, a frying-pan, a gridiron, and a strong tin baking-dish.
